An alternative and healthy way to cook chickpeas.
Ingredients
- 250g chickpeas
- 450g spinach
- 1 onion, finely chopped
- 1/2 bunch of dill
- 50ml white wine
- Juice of half a lemon
- 1tsp Dose Geusi- The Lemon
- 1 tbsp tomato paste
- Salt
- Pepper
- Olive oil
Method
Soak the chickpeas from the night before or for about 8 hours in water with a tbsp of baking soda. Drain and rinse them.
Boil the chickpeas for about 2 hours in salted water, removing the foam from the top.
In a wide saucepan, sauté the onion for 3-4 minutes. Add the tomato paste and wine and leave it for a few minutes until the alcohol evaporates.
Add the spinach and continue cooking for 5 minutes until the spinach withers.
Add the boiled chickpeas, lemon, salt and pepper. Continue cooking for about 10-15 minutes.
At the end, add a little olive oil and dill and stop the cooking.
