Ingredients
For the Fava
- 200gr yellow split peas
- 1 onion coarsely chopped.
- 1 garlic clove finely chopped
- 1 carrot
- 2 bay leaves
- 1 rosemary sprig
- 6 tablespoons olive oil
- 800gr – 1lt water
- Salt and pepper
For the Tuna Salad - 1 pack of tuna in olive oil or in water
- 1 Florina pepper finely chopped
- Spring onions finely chopped
- Juice of a half lemon
- Lemon powder
- Parsley finely chopped

Method
Fava
Rinse the fava with boiled water thoroughly and let it drain.
Place a pot over high heat, add the onions, the garlic and the carrot and sauté for 2-3 minutes until they turn slightly golden and soften.
Add the fava and stir for 1 more minute.
Add the water, the bay leaves, the rosemary, the salt and the pepper.
Simmer in low heat until the water evaporates, stirring all the time.
When the fava is soften, remove from the heat and discard the rosemary and the bay leaves.
Add the rest of the olive oil.
With a hand blender, blend the fava until it has a smooth texture.
Tuna Salad
Mix the tuna with the Florina pepper, the parsley, the spring onions and the juice of the lemon, sprinkle the lemon powder.
For the serving add the fava and on the top add the tuna salad with a spoon of caramelized onions, capers and olives.
