It is based on a unique ancient Greek recipe, that of ” Trahana “. In the book “The Old Kitchen of the World” the English food writer-historian, Elizabeth Luard, calls “trahana” the most primitive noodle in the world, the ancient solution to the problem of maintenance, storage and transport of grain and milk. The wholemeal semolina flour is mixed with milk, eggs, vegetables and herbs, ground into small grains and then left to dry. We have lovingly and lovingly transformed this recipe into a modern and healthy vegetarian meal that replaces milk and eggs with vegetables and dried mushrooms. Large pieces of mushrooms, the perfect spices along with dry vegetables, make the soup a perfect meal, ready in a few minutes. It is a low calorie meal, high in protein and fiber, low in salt and free from any artificial additives with a low glycemic index. A generous blend of dried mushrooms that reaches 10% and vegetables so that it acquires a rich taste, without any use of chemical taste or other technological aids. Dirfis Mushrooms – Chanterelle Mushroom Soup

The company “Dirfis Mushrooms” was established by the two agronomists of the Agricultural University of Athens Lefteris Lachouvaris and Thanassis Mastrogiannis who have specialized in mycology and are professionally active in the field of mushrooms since 1995.
The company started its activities in March 2004 with the installation of a substrate production plant and the creation of the first satellite mushroom growing system in Greece, while in 2006 it entered the production of oyster and shiitake mushrooms. The farm is located near Mount Dirfis, on the island of Euboea. The facilities Include a substrate plant of 15000m2, 20 mushroom growing tunnels 360m2 each, a modern processing facility 800m2 and an olive tree plantation 6000m2. A 25-member team works with the same enthusiasm for the daily production of mushrooms, which is a highly demanding work.
