When during the Ottoman rule the local lords asked the Serrean servants to cook for them a desert, they served a thick cane porridge with nuts, fresh aromatic butter and water coming from Mount Lailia. It is said that the water of Lailia, because it was cool and lighter, was the most important ingredient and the one that gave all the taste to Akane. The porridge boiled in large cauldrons, over high heat, while someone constantly mixed the ingredients with a large ladle. Overseeing the procedure, the lord kept commanding the Serrean servant by telling him “AKA” (i.e. stir) and his servant answered “NE” (meaning ‘yes’ in Greek). That’s how today’s name of “AKANE” came about. Akanes is the preeminent traditional desert of Serres.
