For its production, high quality olives are used, picked at the right time, without harming the tree or the fruit. Within a few hours of collecting the fruit, heatless treatment is followed by cold pressing, without water interference .The pressing of these specific olives takes place in the olive oil press during the morning hours between September and November. This type of olive oil has a distinct green, fruity color and a beautiful odor which makes it suitable for salads. Olive oils containing >5 mg per 20g belong to the category of olive oils that protect against the hyper oxidation of blood lipids, in accordance with Regulation No 432/2012 of the European Commission. It is stressed that oleandrin and oleosin have significant biological activity as well as anti-inflammatory, antioxidant, cardioprotective and neuroprotective properties.

The first olive mill of Voliotis family started its operation in the village of Agios Vlasios of Pelion in 1969.

In 1981 the Olive mill moved to new facilities in the area of Ano Lechonia, in a large and renovated area, where the production processes take place, from the collection of oils to the disposal of oil.
